Life...it happens

I was incredibly motivated to re-start my blog back in January. Unfortunately, life keeps getting in the way. Now, a few of my favorite Lilly shorts also do not fit. (Cue the bummed out music)

The good news, I have created plenty of recipes I can slowly start to post and get my blog back up and running!

In other news, my wheels have fallen off. I've been struggling personally and am getting my act back together. I've been going to yoga, getting back to the barre, and now, getting the junk out of my diet (I've been drinking a lot of Diet Ginger Ale and soda, that is not common for me)

With that, I'm branching out. I'm trying something new. I'm trying a water challenge group. A *FREE* water challenge group.



I am still a BeachBody coach - as I go through life, I realize more and more each day how important that is. How much I enjoy helping people and setting up challenge groups. If you are still looking for more of a challenge - I can still help you with those programs (my first love, 21 Day Fix, and other programs PiYo, P90X, Master and Chisel, 22 Hard Corps, Cize....) Getting Hammered In the New Year

I should have known better. I saw it with my own two eyes in November, the blogging wheels were starting to fall off. We start out with the best intentions, then life happens. In my case, life happened, so did the holidays, my full-time job, and winter blahs.

The good news? I documented a lot of my cooking adventures along the way. I have plenty of recipes to share!

Three weeks ago, I embarked on the new BeachBody program, The Master's Hammer and Chisel. HOLY COW! It is awesome and challenging and pushes you like no other program. Unfortunately, I came down with bronchitis and I am back to day one this up coming Monday.

It is a 60-day program and is intense. If you haven't checked out the FaceBook Challenge page, you should. The results to-date are incredible. In the two weeks I did the program, I was down 5 pounds and was already starting to see toning results. Not to mention a dropping fat percentage.


Day 6 was rough, but was probably one of my favorite workouts to date. A workout I definitely wanted to highlight. After the difficult workout, I finally got to dive into my new Shakeology!

My newest creation, a twist on the recipe from BeachBody.

The Muddy Buddy Twist

1/2 cup water
1/2 cup unsweetened coconut milk,
1.5 tbsp Justin's chocolate hazelnut butter (my favorite!!)
1/4 banana
A splash of coffee (it wouldn't fit in my travel mug) 
Packet of Shakeology Cafe Latte

I tossed all the ingredients into my VitaMix, whirled away, and enjoyed. It was INCREDIBLE! (And my go-to now when I'm not dealing with bronchitis)

So You Had A Bad Day...Chicken

It’s been a bit - attributed to a crazy few weeks!

I’ve made a few great recipes and look forward to sharing them. Tonight, I’ll start with a recipe I have made three times in the last week. Yes, three times. My husband thinks it’s that amazing! This is the same husband that challenged me to do pull-ups after going out to dinner one night, but I digress. (More to come on that!)

My original inspiration for this comes from Nom Nom Paleo. It’s an amazing cookbook - I recommend picking it up! After finishing up my first P90X workout - I had little desire to make a complicated meal. My arms were still shaking. 

One problem, my husband is picky when it comes to eating things, I needed to be creative and do my own thing. Since it requires smashing the chicken and I was having a bad day, we dubbed it:

Bad Day’s Revenge Chicken

1 package of boneless chicken tenders
1/2 cup of almond flour
1/2 tsp of oregano
1/2 tsp sea salt
1/2 tsp Trader Joe’s 21 Seasoning Salute (optional)
2 tbsp oil (I used avocado oil) 
Parchment paper (for chicken smashing)

You are going to need a skillet, preferably a cast iron skillet and a meat tenderizer - to smash the heck out of your chicken. 

First, combine your flour, oregano, sea salt, and 21 Seasoning Salute in a mixing bowl. 

Next, lay down a piece of parchment paper that will extend the length of your chicken (probably about a forearm’s length) Then, place you chicken down on top of the paper. Finally, lay another piece of parchment paper OVER the chicken. 

Here comes the best part, taking your bad day out on the chicken! HECK YEAH!



Once complete, you are going to individually roll the chicken in the flour mixture. Do what works best for you, I put the rolled chicken on a separate plate before cooking, I know each person has their own cooking quirks. Do what works for you. 

The final step is cooking the chicken. You will want to heat up the oil in the skillet then add in 2-3 chicken tenders. Let cook for 3 minutes then flip and cook for 3 more minutes. 

Once cooked, do you feel is best to keep the chicken warm (whether placing in a covered dish in the microwave - just as storage - wrapping in tin foil - do what floats your boat!) Continue this until all chicken is cooked. 

That’s it. All done! We added a side of broccoli with our chicken and it was an amazing meal.
